NY Times: Yvetta Fedorova
The NY Times Columnist, Jane Brody, asked for suggestions on how to entice Americans to eat more vegetables, and that request drew nearly 600 e-mailed responses.
She categorized them into the following themes: Start Young and Focus on Flavor and wrote and article called: Learning to Love Veggies: Readers Weigh In.
These themes seem simple, but it's sometimes difficult to put them into practice and requires some Change Management.
Her readers suggested some great tips on roasting vegetables and never boiling them, and roasting Kale to make Kale Chips. Yes, I love Kale Chips so I had to mention that one :-) You can read the full article here.
