The health benefits of Quinoa (pronounced KEEN-wah) are plenty, and this NY Times article features the history of the grain, a recipe (just make sure to use the vegetable stock option), and the fact that the protein content is superior to most grains because it contains all the essential amino acids. Quinoa is high in lysine, an amino acid important for tissue growth and repair. It’s also a good source of manganese, magnesium, phosphorus and copper, and it has a high iron content.
