The best green cocktail is a mojito made from fresh, fresh ingredients - including the mint growing in my garden. I like it with lots of fresh squeezed lemon and lime juice and a Nicaraguan rum is best if possible!

1.5 oz Vodka (Tito's is great!)
3 slices of cucumber, skin on
few sprigs of thyme
1 lime
1/4 oz lavender simple syrup
1/4 oz sparkling water lime essence

muddle cukes and thyme in vodka. until a cloudy. strain into a shaker.
add crushed ice, the lime juice, simple syrup and sparkling water. Shake and pour. Serve up with a sprig float.

The crushed cuke skin leaves the palest of green color so the cocktail is beautiful to look at as well as fantastic to drink!
