NY Times: Yvetta Fedorova The NY Times Columnist, Jane Brody, asked for suggestions on how to entice Americans to eat more vegetables, and that request drew nearly 600 e-mailed responses. She categorized them into the following themes: Start Young and Focus on Flavor and wrote and article called: Learning to Love Veggies: Readers Weigh In. These themes seem simple, but it's sometimes difficult to put them into practice and requires some Change Management. Her readers suggested some great tips on roasting vegetables and never boiling them, and roasting Kale to make Kale Chips. Yes, I love Kale Chips so I had to mention that one :-) You can read the full article here. The book: Good, Better, Best Wines ranks wines by variety and price up to $15. Scientists say that putting clocks back in winter by ending Daylight Saving Time (DST) and putting their clocks back by an hour is bad for health, wastes energy and increases pollution. They say that leaving clocks alone as winter approaches would allow an extra hour of daylight in the afternoon and could boost levels of vitamin D as well as encourage people to exercise more. Britain and Russia politicians are being asked to consider parliamentary bills suggesting it's time for a change. "It must be rare to find a means of vastly improving the health and well-being of nearly everyone in the population -- and at no cost," said Mayer Hillman of the Policy Studies Institute in Britain, where a bill on DST is coming up for consideration in parliament soon. "And here we have it." A study published earlier this year found that advancing clocks by an hour in the winter would lead to energy savings of at least 0.3 percent of daily demand in Britain. Elizabeth Garnsey, one of the study's authors and an expert in innovative studies at Cambridge University, said this was equivalent to saving 450,000 metric tons of CO2 during winter alone. They predict that veggies will be big in restaurants next year, announcing that: Even meat-minded chefs are vegging out as flextarian goes mainstream. Meatless Mondays and vegetable based tasting menus are gaining traction as guests realize it’s not all about the meat on the plate. Many eateries nationwide have already realized that Meatless Mondays are great for business and a creative way to showcase their skills. Since celebrity chef Mario Batali began offering Meatless Monday options in his restaurants across the country, others have followed his lead. Meatless Monday dining suggestions are now popping up in Zagat, the Chicago Tribune, Organic Authority and Food & Wine. The trend has even gone international, with Canada’s Globe and Mail reporting on chefs who use meatless meals to highlight their culinary talents.
The success of eateries like Dovetail, Nage, Maoz Vegetarian and Tender Greens shows that Meatless Monday is popular with chefs and customers alike. When scientists unearthed the body of Ötzi, the Bronze Age man found perfectly preserved in a glacier in the Italian Alps in 1991, they discovered he had eaten an ancient species of wheat called Einkorn for his last meal. A group of Italian researchers became curious about the grain and started what would be more than a decade of discovery. Jovial has now introduced the organic First Ever™ Whole Grain Einkorn Pasta, made from the world’s most ancient wheat, first cultivated 12,000 years ago. Einkorn was lost in time when new varieties of wheat with much higher yields were created by natural and commercial hybridization. “Jovial had its official start in 2010, but was idealized for many years,” said Carla Bartolucci, co-founder of Jovial. “It is our dream to change the future of agriculture by creating consumer demand for the purest, most ancient varieties of food. Our sustainable economic model focuses on farming first and then considers the entire process all the way through to the shelf. We believe the purest food we are all seeking can only come from the purest seed.” Jovial Whole Grain Einkorn Pasta is available in five varieties: Rigatoni, Penne Rigate, Fusilli, Spaghetti and Linguine, range from $3.39-3.69 per 12 oz box, and are available at Whole Foods nationwide. Ancient grains are inherently more nutritious than modern varieties. Einkorn is the most ancient wheat. It is more nutritious on many levels than modern organic wheat, and even outperforms other “superfoods” including the blueberry in its nutritional value. Although Einkorn is a healthy source of dietary fiber, it does not have a grainy or gritty texture. Packed with protein, B vitamins and minerals, a meal with Einkorn pasta is very sustaining. It's:
